I've now made this recipe twice for a birthday cake and some fundraiser cupcakes. After two batches, the leftover frostings will frost a third cake perfectly. Yes it makes a lot of frosting but it freezes well. I have made this fabulous cake several times and everyone loves it. Adding the milk powder is a game-changer and creates a caramel flavor.

The frosting took about 8 min to get to the mocha-colored stage. This is a phenomenal cake but oh, that frosting is next-level! I followed directions exactly but I added espresso powder at the same time as the cocoa powder (King Arthur Black Cocoa). This is a keeper recipe and I like serving it out of the pan. As for the cake, I didn't have buttermilk so I made my own by taking 1C milk and adding 2T white vinegar and stirring and waiting 10 minutes before using. You can smell the rich buttery caramel smell as it browns. I was able to work it in nicely without big clumps, although it is definitely small clumps and that will not turn out to be clumpy in your frosting.

I turned the heat down a bit once the butter foamed and I added the dry milk. For those worried about clumping when adding the dry milk to the foamy butter, I think the key is to use a small sauce pan and to have the heat on medium low to low. The frosting is[phenomenal with a rich caramel-ish flavor. Maybe next year’s theme will be snow mobiles! Can’t wait to make again with the brown-butter frosting.

I made a box cake and this frosting recipe to top it. My husband suggested I put some espresso powder in the frosting, which I did for a second cake. It's the perfect balance for the frosting which is sweet and salty. I took it to work for the day shift staff, and now there are night shifters approaching me with "rumors of some amazing cake".
